I'd recommend you to test all exam topics on all RHEL versions that are out there, this way you should be prepared for anything that gets thrown at you during the exam. In terms of recommendations, be aware that the RHCSA exam may still be on RHEL 7.0/7.1 when you take it, even though Sander's videos are now based on RHEL 7.3. I never used Linux Academy therefore cannot comment on that, but really, do read Sander's book! I would strongly suggest reading Sander's book because there are many helpful tips there (that's the book that I used myself). Your study approach looks good, you should watch Sander's videos first, and then start practicing all exam topics. A friend of mine learnt RHCSA objectives in 2 weeks. I need to say that Linux is my bread and butter, I use is day in, day out, therefore don't use those 3 days as a baseline. I cannot remember exactly, but I think it took me approx 3 days (20-25 hours) to go through all RHCSA objectives and learn them. To answer your questions, the amount of time it takes one to learn RHCSA exam objectives is really subject to experience. I believe that Sander Van Vugt courses are enough to pass this exam with very high score.
